Spaghetti with Broad Beans

Spaghetti and Broad Beans
Ingredients:
250 g spaghetti
700 g broad beans
3-4 g dried tomatoes in oil
1 piece of garlic
1 onion
1 TB roasted pine-stone pips
2 TB olive-oil
1-2 TB parmigiano
vegetable salt, pepper
For this broad beans vegetarian recipe, start by cleaning beans, simmer them in boiling salted water for 1-2 minutes. Let them cool and peel.
Pare onions and garlic, cut into little squares. Cut dried tomatoes in small pieces.
Heat the oil, steam onions. Add beans, garlic and tomatoes, steam for another 2-3 minutes.
Spice with vegetable salt and pepper. Boil spaghetti in salted water until they are done.
Add vegetable and pine-stone pips to the spaghetti and serve with parmigiano.

Broad Bean Soup
Ingredients (serves 2):
1 tbsp Vegetable oil.
1 Medium onion, finely chopped.
225g (8oz) Fresh broad beans, shelled.
500ml (18fl oz) Vegetable stock.
1 tbsp Fresh mint, chopped plus.
A few leaves for garnish.
Black pepper.
2 tbsp Reduced fat plain yoghurt.
Method:
Heat the oil in a pan and sauté the onion until soft.
Add the beans and the stock and simmer for about 15-20 minutes.
Add the chopped mint and pepper.
Remove most of the mixture to blend, leaving some beans in the pan.
Blend the mixture in a food processor until smooth.
Pour the mixture back into the pan, reheat and stir in the yoghurt before serving.
Garnish with a few mint leaves and serve with wholemeal bread or toast.

Broad Bean & Mint Soup
Ingredients (serves 2):
1 tbl Vegetable oil.
1 x Onion.
2 x Cloves garlic.
2 med Potatoes, chopped.
1/2 pt Vegetable stock.
1 1/2 lb Broad beans. shelled.
1 x Lemon, juice.
1/2 pt Single cream or soya milk.
1 sprg mint chopped Mint leaves for garnish.
Salt and ground black pepper.
Method:
Heat the oil in a large pan and add the onions and garlic, cook until the onions begin to soften.
Add the potato and stock to the pan.
Meanwhile cook the broad beans in boiling water for about 5 minutes.
Bring the soup to the boil and simmer for 20 minutes. Add the beans and stir.
Leave the soup to cool then add the lemon juice, cream and mint. Puree until smooth.
Season to taste.
Garnish with mint leaves.
