young enough they can be shelled and eaten raw, the bean, skin everything.
When selecting Broad Bean, it is best to pick the smallest, crispest and most evenly green of pods but discoloration can
be expected. Try to avoid the larger, heavy pods with slightly yellowing beans.
When storing your Broad Bean you can keep unshelled beans in the refrigerator for 2 days. On the other hand you
can shell them, blanch them and skin the bean and store in a plastic container in your freezer.
